Mushroom Tacos

King oyster mushrooms, shredded

Poblano peppers, diced into strips

Garlic cloves, minced
1
Shallot, finely diced
1 tbsp (5 g)
Fresh cilantro, diced
1 tsp (5 g)
Paprika, smoked
Dash
Salt and pepper, to taste
Instructions
1.
Cut the tops off the king oyster mushrooms and shred the bases into strips.

Add mushrooms to a heated, unoiled skillet and add some salt. Heat on high. Cook undisturbed until they give off some water, 4 to 5 minutes.

Add diced peppers and shallots, reduce heat and cook until soft.

Once the vegetables are almost cooked to your liking, add the garlic and cook for one to two minutes.
5.
Add a little bit of water if needed and paprika, more salt and pepper. Toss to combine.
6.
Add mixture to heated corn tacos and top with cilantro.
