Classic Meatloaf

1/4 cup (60 ml) + 2 tbsp
Extra virgin olive oil
4 tbsp (~50 g)
Garlic, minced

Medium onion, roughly diced
2
Red peppers, roughly diced
1/2 cup
Lightly packed basil leaves, minced
2 tbsp (10 g)
Parsley leaves, minced
4
Large eggs
1 tsp (5 g)
Kosher salt
1/2 tsp (2.5 g)
Black pepper
2 cups
Parmesan cheese, grated
1 1/2 cups (135 g)
Dried breadcrumbs
3 lbs
Ground beef (90/10)
2 tbsp (30 ml)
Worcestershire sauce
2 tbsp (30 ml)
Balsamic vinegar
1 cup
Marinara sauce

Instructions

Set oven to 350 F / 177 C

Heat 1/4 cup of olive oil in medium saute pan over medium heat. Add the peppers and the onions and cook until soft. Once soft add the garlic and cook for one minute. Let cool.

Whisk together basil, parsley and eggs in a small bowl. Add salt and pepper.

Combine the parmesan cheese and the breadcrumbs in another small bowl.
5.
Add the pepper, onion and garlic mixture to a cuisinart or blender and blend until finely minced.

Thourougly combine the meat, pepper and onion mixture, herbs and egg mixture, and breadcrumb mixture in a large bowl.
7.
Add the worcestershire, vinegar and remaining 2 tbsp of olive oil to the meat mixture and mix gently using your hands, do not overmix.
8.
Pack the meat mixture into an oiled loaf pan, cover the top with some marinara sauce and bake for 50 to 60 minutes or your instant read thermometer registers 160F. Let rest for 10 minutes before serving.
