West Coast Burger Sauce

2
Yellow onions, finely diced
2 tbsp (28 g)
Unsalted butter
2 tbsp (30 ml)
Worcestershire sauce
2 tbsp (30 ml)
Your favorite hot sauce
3/4 cup (180 g)
Mayonnaise
1/2 cup (130 g)
Ketchup
1/4 cup (65 g)
Mustard
1/4 cup (32 g)
Sweet relish
Dash
Salt and sugar to taste

Instructions

1.
Dice the onions and add unsalted butter to a small saucepan over medium heat.
2.
Add onions once the butter is bubbling along with a pinch of sugar and salt.
3.
Cook over medium heat for around 30 minutes, you can add a tbsp of water every minute or so to reduce the caramelization time.
4.
In a medium bowl, combine and whisk together worcestershire sauce, white vinegar, mayonnaise, ketchup, mustard, and relish.
5.
Add caramelized onions.
6.
Use immediately or let chill in the refridgerator for several hours.
