Chipotle Crema

Finely chopped chipotle chilis
3/4 cup (115 g)
Greek yogurt
1/4 cup (30 g)
Mayonnaise
1 tbsp (15 ml)
Lime juice
3/4 cup (180 g)
Mayonnaise
1/2 cup (130 g)
Ketchup
2 to 4
Garlic cloved, grated

Medium yellow onion, charred
Dash
Salt and pepper to taste
Instructions
1.
Slice the onion in half and peel off the outer layer. Place face down in a ungreased pan over medium heat until charred.

Add all ingredients into a blender and blend at high speed for 15-30 seconds, or until smooth.

Add salt and pepper to taste, can be stored in the refrigerator for about a week.
